Welcome to more Freshly Green!

Your hosts, Greg Peterson and Amy Godfrey, are here to bring you a fun approach to living green! Sit back and listen, and learn about what “living green” means to them, plus some easy tips for conserving that everyone can follow, because living green doesn’t mean living without.

In this episode, Amy and Greg talk about desert edibles, those luscious and unexpected treats that can be found out in the desert and harvested. Hear a little about prickly pears, paloverde beans, saguaro fruit, mesquite beans, and more. Greg also gives some suggestions on how to prepare and cook mesquite beans, and you really don’t need a solar oven to get the same results!

Did you know that meal made from mesquite beans was gluten free and good for diabetics? November is time for desert milling around the southwest, but stay tuned for a report on what mesquite meal pancakes taste like.
